I received this from the owner in response to an email asking about their vegan options.

"The waitstaff are well versed in what can be prepared Vegan. All the entree salads can be prepared without dairy and with Tofu substitute . The mayonnaise we use is egg free so no need to avoid dressings. The Sope with wild mushrooms just has to have the custard removed to be Vegan.

Almost all the Chile sauces are Vegan in that they have no dairy component. the house salad is fun and unusual and can be ordered without the queso garnish. I really need to get a little menu printed up and laminated for our Vegan friends so that it is really easy for both you and the waitstaff to figure out. I will put that on my list to do. If I have notice that you are coming in I can prepare the vegetarian enchilada without cheese.
Two days notice is good.

This is a segment of the eating out market that I would like to cater to. So I will work on this.
