Eating out, big nutrient dense salads?

Okay, get your minds out of the gutter awesome

I've been wondering if anyone knows of restaurants where you can order big salads full of dark leafy greens like kale and spinach, with some oil-free dressing options?

Of course Whole Foods is great for this, and making them at home is cheapest, but sometimes we want a sit down place where we can binge on salads made with REAL greens. Hopefully Counter Culture will soon offer mega Kale Pac Man salads to help fill this void! Maybe even a 4 course kale meal with kale chip nachos, kale salad, raw kalesagna and kale fruit smoothies! ;P

I've been trying to eat more good food suited for primates like us ever since seeing Forks Over Knives and all the other avalanche of evidence that processed food is usually nutritionally poor, even when vegan. Robert Cheeke made a good point at his speech yesterday (congrats to all on AMAZING Veg Fest success, by the way!!) that dark greens are the very best foods for us, yet if you track how often we actually eat them versus how much we think/talk about eating them, it's not that much. I wanna be eating them as main meals at least once a day most days.

Any tips?

The vegan lux salad at Bouldin Creek is danktastic and definitely piled high with leafy greens (lettuce, spinach and basil I believe).  I also like to go to Souper Salad for the buffet and just load up on the healthy stuff (they have baby spinach, but not kale.  However, IMO spinach and lettuce are superior to kale in digestability/bioavailablility of nutrients).  To ensure a healthy dressing, I always make my own at home and bring it in a plastic bag.  Might seem kinda weird, but people learn to deal with it.

The salads at Blue Dahlia have medium and dark greens, the pesto is vegan, and you can add/sub tofu to any salad (although it's just bland tofu...they need to grill it up or something). I also just love the atmosphere there and the service is always really good. I like to either sit out back or at the communal table.

Thanks guys. I've been meaning to try that V-Lux salad at Bouldin! That's interesting about the bioavailability of spinach vs kale--will have to check that out but that makes sense if kale is less digestible.

I like Blue Dahlia too--usually get the hummus tartines sans butter--$4 before 6:30 on weekdays! Will have to check out the salads, and pesto for sure.

I know you were asking about eating out, but just wanted to throw in a suggestion for cooking at home.  Whenever I make pesto I usually throw in a bunch of kale, collards, or spinach for added nutrients.  You can use water or veg broth instead of oil, or just a bit of oil and other liquids to bring it to the right consistency.

jess, at first i was like, is this really going to be worth the 9 minutes?  but it was!  :-)

this post reminds me that i wanted to post awhile ago that the last time i went to leaf they told me their tofu was marinated in a mixture of stuff that includes honey!  i'm not sure how reliable the source was (just someone working on the line who mentioned it when i was inquiring about the dressings) but i thought that rather sucked!  if it's true, it sucks because i liked the largeness of their salads.  also, why make the tofu into something not vegan!?

That is really interesting Jess!

Makes we wanna go get a custom super juice mix at Whole Foods now. (They have reasonably priced fresh juices and will do almost any combo, fyi). Maybe I'll get a kale/spinach/beet/onion/garlic juice for maximum antioxidants! happy

Jeff, have you tried the salads at Beets?  They are really good there.  I know at least one of the dressings is oil free. (and it still taste awesome!)

Anyone care to explain what the heck the video was talking about? How did they figure that veggie X was better than veggie Y for cancer type Z? That isn't really explained well.

I have investigated similar claims in the past. It usually turns out that the veggie in question may correlate with less of a certain type of cancer, yes. But, the people studied had no statistically significant difference in cancer mortality rates. In other words, you eat more spinach and avoid pancreatic cancer, but you end up getting prostate cancer instead. That's the gist of it anyway.

Also, studies are often done of the general population, not of vegans. When vegans are studied, we generally see there's no statistically significant difference in cancer mortality rates vs. the general population. But then, not a lot of studies have been done on this, so the data is pretty weak.

Another way of studying these things has been in-vitro. In other words, using test-tubes. They culture cancer cells and introduce some foreign substance, then they come back and count cancer cell deaths after a certain amount of time. It's fine, but it doesn't mean the same thing will happen in people. For one thing, you're eating the veggies, whereas in test-tubes, you're squirting the substances that are inside of veggie cells into the cancer culture directly, without undergoing digestion or dilution in the body. There have been literally thousands of promising compounds found to kill cancer in test-tubes, but they failed to show the same effect in lab animals and people. Not to mention compounds that were too poisonous for people.

Oh, and then there are ORAC scores. You can look that one up on wiki if you don't know what that is. In theory, the higher the ORAC score the less cancer you should get, but it depends on the substance and generally isn't the case.

So I'm not sure which of those the video is talking about. Each one, though, is flawed.

Anyway, I'm not saying veggies don't have any effect on cancer. I'm just saying they may not have an effect beyond a certain point. And they almost certainly aren't effective for treating cancer when you get it. Eat your veggies, sure, but also take your chemo. That is my advice for anyone who gets cancer.

I've always been a big fan of the Spinach salad at Mother's (not Kale, but still tasty). I also love the avocado ceasar salad from Daily Juice Cafe and the cashew ceasar from the Steeping Room. (I am also missing Counter Culture's Kale salad. Soon! Soon!)

I think that anti-cancer properties are only one aspect of foods.  Foods have many properties and to look at only one nutrient or family of nutrients (e.g. which has the most protein) is a fractionated view of nutrition that often leads us to pick foods that are not are the best at meeting our overall nutritional needs.  For example, this video promotes the use of garlic for its anti-cancer properties.  But garlic is also antibiotic (meaning "anti life"awesome so it does a good job of killing bad bacteria, good bacteria and to a lesser extent, you.  Ever notice your body tries to expel garlic through your breath and your sweat?

Sorry, this just may be the crazy 811er rambling here but I think as long as we are getting a variety of raw, young, tender, leafy greens on a daily basis we are getting the vitamins, minerals and phytonutrients that we need.

well, the clip mentions that garlic has been shown not to destroy good bacteria (at least if i remember correctly...i'm not watching the 9 minutes again:-) ), but agreed eating a variety is always best!

I actually did just get nearly the smoothie I described above at Whole Foods--it had a carrot base, plus kale, spinach, beets, broccoli, mango and garlic! I definitely noticed the garlic but it wasn't bad.

Ok this was some very good info. I find myself not eating out because all the vegan yummies I have had since I moved here have been basically junk food. So I've been sitting at home munching on leafy greens by the handful. (Like chips. While watching TV. My brother thinks I'm odd to say the least.) A cashew ceasar salad sounds delish!
