i owned a veg cafe / coffeehouse in Detroit for 11 years.  i just sold it in April and moved to Austin just a few days ago.  i'm really liking it here and am excited that there's a group like this..

ok, so from day one i made all the soups vegan.  my secret for making creamy soup was Soy Milk Powder.  i saw it at Weatables just the other day.

where as soy milk will break, the powder has binders in it - xanthan and guar gum that keeps the soup thick without curdling. great from chowders.  yeast for cheeziness as well as chili powder.

i also use it to make cream gravy for my chicken fried tofu.  i love making southern comfort vegan food.  as well as creamy dressings. it makes a great Caesar with dulce added to replace the anchovies..

i made an awesome McFish Filet sandwich using it in my vegan tartar sauce.

email me for my secret replacement for bacon..

also, i'm looking for work.  does anyone need a personal chef?  no meat or fish..vegan preferred.

Thanks for the secret.

I don't know anyone who's looking for a personal chef, but I know there are a lot of people in the group that have some good ideas for vegan restaurants if you want to own another restaurant happy

Hey Caleb, welcome to Austin.  Methinks you were brought here to open a vegan restaurant! =)
The vegan comfort food you mention reminds me of an article a few months ago in the Washington Post with about 5 recipes in this ilk.  Such as orange glazed sweet potatoes. BBQ tofu, and collard green wontons.  I'm inspired to try them now.  Thanks.

So, now I am curious, what is the bacon secret?

Posts like this always remind me of what a horrible cook I am.  It's pathetic and a wonder I haven't killed myself with food poisoning or starved to death yet.
