8 oz firmest tofu
2 tB olive oil
1 ts brown mustard seeds
1/2 onion, finely chopped
3 garlic cloves, finely chopped
1" cube ginger, grated
1 ts garam masala
1 ts coriander, ground
1 ts cumin, ground
1 ts salt
1/2 ts turmeric
1/2 ts cayenne
16 oz bag frozen chopped spinach
1/4 c water
2 tB nutritional yeast
1/2 lemon's juice


Cut tofu into 1/4" cubes & fry in oil for a few minutes until browned. Set aside.
Fry mustard seeds in oil on medium heat with the lid on for a couple minutes until they stop jumping.
Saute onion, garlic & ginger in the same pan for a few minutes until onions become translucent.
Add garam masala, coriander, cumin, salt, turmeric & cayenne for a minute.
Add spinach, water, yeast & lemon juice & simmer for about 20 minutes.
Remove 1/2 of the saag, blend it & mix it back in.
Fold in tofu from earlier.
Serve over basmati rice.
