2 cups Green or red leaf lettuce, chopped
1 serving tofu, drained
1-2 Tbs nutritional yeast
1 Tbs Annie's Goddess salad dressing
1 Tbs cold water
1 pita bread
Salt, to taste (about 1/4 tsp)
Pepper to taste


Cut pita bread in half and set to toast.  

Meanwhile, in a med-large salad bowl, mix together Goddess dressing and water until smooth.  Add lettuce--salt and pepper generously.  Salt tofu and crumble into salad bowl.  Add nutritional yeast to the mix and blend well, making sure to mix it with the tofu as well as the lettuce.  Toss until all ingredients are evenly mixed.

Stuff pita pockets full and enjoy as a light snack or meal.  Great for warm weather.  Serves 1.
