Simple Spanish Rice posted by i'mouttahere


1 cup rice (jasmine or basmatti)
1 tbsp oil

1 med can of rotelle
1 small can chopped green chilis
1 can garbanzo beans, drained
1 can sweet whole kernal corn, drained

1 tsp cumin
1 tsp red chili powder
dash of salt


Heat skillet at around 300 degrees
Brown the rice with the oil

Add the rotelle, chilis, and garbanzos
Fill the rotelle can with water and add that. Stir in the cumin, red chili powder and salt.

Raise temp to 350 degrees, stir until it boils for about a minute. Then lower the heat and cover. Simmer low for a while and do not stir. Time for this is about 20-25 minutes or until the rice is just right. Then add the sweet corn.

This is a very simple easy recipe and has been a hit with everyone I've served this to.
