Special Creole Sauce:
1/2 tsp Creole Seasoning
2 tbsp dijon mustard
1/2 tsp agave nectar
1 tsp ketchup

Shrimp and batter:
4 tbsp flour
8 tbsp bread crumbs
1/2c milk
1/2 tbsp corn starch
salt, pepper, creole seasoning to taste
1 lb fake shrimp (Avail. at My Thanh Market and probably other places)
Oil for frying

Sandwich materials:
French bread baguette cut into 6-9" pieces with square ends
Shredded iceberg lettuce
Fresh, firm tomato, sliced and halved.
Your favorite vinegarry hotsauce (preferably Louisiana style, not southwest)



Mix all that crap together! Taste and adjust.

Po' Boy Batter:
Mix all that crap together too, except the shrimp. You want it to be about the same consistency as pancake batter, so adjust the milk to whatever you want, and season to your taste.

Coat the shrimp as evenly as you can.

Heat the oil in a medium sized saucepan, and fry those puppies up! Let them get golden brown (a minute or so), then flip and fry til crisp. Drain on drying rack / paper towels.

Sandwich construction:
Cut the bread lengthwise 3/4 of the way through so it is "hinged." Spread awesome delicious creole sauce on both sides.  Add the tomatoes down one side, and a nice bed of shredded lettuce. Top with as many shrimp as you can cram in there and add a few drops of your hot sauce if you wish.

Serve with some black eyed peas and steamed greens (spinach in the picture)  and holy crap it is awesome.
