**You can make a pie crust or you can get a whole wheat organic one from Wheatsville or wherever and it's just as delicious but of course not as cheap!

2 vegan pie crusts (keep frozen)
1 pkg firm tofu
1 pkg frozen chopped spinach
1 1/2 cups soymilk
1 small pkg frozen corn
1 medium onion, finely chopped
1 portabella, finely chopped
1/2 block of soy mozerella
1/2 block of soy cheddar
5 tbl vegan parmasean
1 tsp oregano
1 tsp sage
1 tsp curry powder
pinch of tumeric
sea salt, ground pepper
olive oil


Saute onions in a skillet with olive oil.
Add portabella once onions turn translucent.
Add oregano, sage, salt, pepper.
Add 1/4 of mozerella and 1/4 of cheddar.
Add spinach until unfrozen and mixed well.  Let simmer on low for cheeses to melt.

In a blender or food processor, add the soymilk, tofu, 1/4 of mozerella, 1/4 of cheddar, and corn; blend well until you reach a thick cake-like batter.  Add to skillet mixture and stir well.  Turn off heat and let thicken a few minutes.  Add tumeric and stir well.

Fill pie crusts to the brim.  Sprinkle the parmasean on top.  Bake uncovered at 350 for 30-35 minutes.  Enjoy warm!
