Warm Apple Banana Delight for Breakfast! posted by lmyers04


1/2 cup wheat flour
1/3 cup unprocessed sugar
3/4 tsp baking powder
1/4 teaspoon salt
1/8 teaspoon freshly ground nutmeg
1/4 teaspoon cinnamon
1/4 cup "milk"
1/2 teaspoon vanilla extract
1 medium apple, diced
1 banana, chopped
1/4 cup sunflower seeds

1/3 cup water
1/4 cup unprocessed sugar
2 Tablespoon maple syrup
2 Tablespoon vegan margerine


Preheat oven to 375 F (190 C).  In a medium bowl, whisk together the flour, sugar, baking powder, salt, nutmeg, and cinnamon.  

Stir in the "milk", vanilla, apple, banana, and sunflower seeds. Spread into a greased 8x8-inch baking dish. Set aside.

In a small saucepan, bring the water, sugar, syrup, and margerine to a boil.  Once the margerine has melted, pour over the batter in the baking dish. DO NOT STIR.

Bake for about 40 minutes.  Makes two large or four small servings.
