Bangkok Burgers w/ Peanut Cilantro sauce posted by kaylawayla

Ingredients:

Burgers:
1 lb. firm tofu
1 3/4 - 2 cups canned black beans, well drained
3/4 cup quick-cooking oats, uncooked
1/2 cup red onion, finely chopped
1/2 cup carrots, finely chopped
1 tsp. fresh ginger root, grated
2 tsp tamari / soy sauce
2 tsp brown sugar
2-3 cloves garlic, minced
1-2 tsp. red pepper flakes
vegetable oil for brushing / greasing pan
flour for dusting patties
1 medium cucumber, sliced thinly

Peanut Cilantro Sauce:
3-4 tbls organic crunchy peanut butter (or smooth, your choice)
1/4 cup fresh cilatro, minced
2-3 tbls fresh lemon juice

Directions:

Burgers:
Drain tofu of excess water.  Crush tofu in tiny bits in large bowl.  Add all ingredients except for oil, flour, and cucumbers.  Mix well.  Form the patties in medium slices and brush with oil and dust with flour.  Place on a slightly greased cookie sheet.  Pre-heat oven to broil.  Broil about 4 minutes on each side or on a grill.  The middles won't cook entirely but that's okay, they're still yummy...you'll know they're done when the outsides are browned and a little crispy!

Peanut Sauce:
Blend all ingredients together and spread on pattie just before serving.

We like these "sans buns" but you can of course eat them on toasted buns or bread of your choice.  It's more loafy without the buns and healthier too!  These are sooo good and they make great leftovers, too.  happy Top with the sauce and sliced cucumbers!
