quinoa and spinach from uncheese potluck posted by Jacob

Ingredients:

organic olive oil
2 cloves organic garlic
raw cashews
raw organic pecans
cumin
coarse ground organic black peppercorn
2 small organic yellow onions
1 medium/small carrot
2 bay leaves
1 cup of quinoa
a lot of spinach
parsley
1 large basil leaf from my basil plant happy
1.5 Tablespoon organic lemmon juice

Directions:

1. Heat about 1-2 tablespoons of olive oil on medium.
2. Use garlic press and add to oil.
3. crush/break pecans and cashews to the size you like and add in.  I probably used about 7 cachews and 12 pecans.
4. add lots of cumin and ground peppercorn.  I'm not sure how much I used, but I love cumin so I tend to use a lot.  (you love cumin too..)
5. as you let the garlic and nuts heat for a few minutes, dice up onions and carrot.
6. when the garlic/nuts look good enough, add in carrot and onions and bay leaves.
7. let heat for a while until it's at the browness that you like.
8. stir in 1 cup of quinoa and 1 cup of water.  this will take about ten minutes for the water to boil out. go ahead and cover it at this point with a lid.
9. when the water is 1/3rd of the way gone, add in spinach.
10. when the water is about 2/3rds of the way gone, add in parsley and basil. stir it all up a little.
11. when it's all done, take off heat and stir in a little lemon juice.
