for the cake:
1 1/2 cups vegan sugar
1/2 cup Willow Run margerine, softened
Ener-G Egg Replacer equivalent to 2 eggs
2 tsp vanilla extract
2 to 2 1/2 cups unbleached white flour
2 1/2 tsp baking powder
1/2 tsp sea salt
1 1/2 cups vanilla soymilk

for the icing:

1/2 cup Willow Run margarine, softened
1 cup confectioner's sugar
2 tsp lemon extract
1 tsp vanilla extract
splash of vanilla soymilk

To finish:
shredded coconut
sliced strawberries


For the cake:

Cream together margarine and sugar.  Mix in egg replacer and vanilla.  In a seperate container, stir together 2 cups flour, baking powder and salt.  Slowly blend flour mixture with sugar mixture, adding up to 1/2 cup more flour until a pourable consistency is reached.  Pour into cake pans of your choice, or use cupcake molds.  Bake at 350 F for 30-35 minutes.

For the icing:  

Cream together margarine and sugar, then add lemon and vanilla extracts and soymilk.

Ice the cake or cupcakes, top with shredded coconut, and garnish with sliced strawberries.  (Put berries between the layers of a layer cake, too!)
