1C Dry Split Yellow Lentils
3C Vegetable Stock
2T Minced fresh ginger
1/2 tsp Salt
1/2 tsp Tumeric
1tsp Vegetable oil
1 1/2tsp Mustard seeds
1 small sliced onion
2 cloves chopped garlic, chopped
2tsp Ground Cumin
2 Bay leaves
1 chopped tomato (or 1 can chopped tomato)
1T Lemon Juice
1 Serrano Pepper, chopped


In a saucepan, boil the stock/lentils/ginger/tumeric covered on medium heat for 20 minutes. Then place one cup of this into a blender, blend it, and return it to the rest, boiling for 15 more minutes.
Heat the veg oil in a skillet on LOW HEAT. Add mustard seed and heat until they start to pop. Add onion, (raise the heat to med-high)cook until softened. Add the serrano and garlic. Cook 1 minute. Add cumin/bay leaves/tomato. Cook 2 minutes more. Stir all of this into the lentils. Add salt and lemon juice. Simmer for 5 minutes.
Serve over Basamati rice.
