Ingredients:

- Vegetable oil
- Reduced fat peanut butter (I just use JIF)
- Spicy peanut sauce
- 1 package of pad thai noodles or brown rice udon noodles
- 1 handful of cashew halves, unsalted or lightly salted
- One big carrot, chopped into rounds
- 1 handful of bean sprouts
- 1/2 chopped yellow onion
- 1 red bell pepper, sliced
- 1 head of broccoli, cut into florets  
- 2 cloves of garlic, diced
- 1 lemon wedge for acidity
** Then I add or subtract veggies, depending on what I have or how much I can afford, it is also good with water chestnuts!

Directions:

- FIRST - prep veggies, chop 'em up!

- Get yo wok out and yo pot out!!!

- Put about a half a pot of water on HI to boil (add a dash of salt to make it boil faster if you want, also add a splash of veggie oil so that noodles don't stick)

- Pour veggie oil into wok, cover so there is about 1/4" of oil and set on medium to medium high heat

- Throw in cashews, wait 1 minute, throw in carrots, wait 1 minute, then throw in broccoli

- This is where you get creative, depending on your tastes.  I start seasoning the ingredients with the spicy peanut sauce, the longer it cooks, it will lose spiciness so you have to keep adding it through out cooking.  Just make sure to taste before adding more!  * So right about here is here I would drizzle spicy peanut sauce over the ingredients in the wok.  You also should be stirring and/or flipping your ingredients, make sure you're not low on veggie oil so that your ingredients don't burn

- Once water is boiling, throw in noodles, check every couple of minutes because they cook pretty fast -- if you don't want them to cook fast, you can turn the heat down to medium

- Add onion and and bell peppers, add spicy peanut sauce to your liking

- Check your noodles

- Add garlic and bean sprouts, add spicy peanut sauce

- NOW the peanut butter comes into play, I usually use about one to two scoops at first before adding the noodles -- this will also depend on how peanut butter-y you want your dish to be, you could make it really thick with peanut butter, or make it more of a peanut sauce all together.

- Throw cooked noodles into wok on top of ingredients and start stirring/flipping!  

- Add more spicy peanut sauce and peanut butter to your liking

- Once ready to serve, squeeze lemon wedge over your plate

- Done!  It's a super easy meal that totally impresses everyone.
