Kale Cranberry Pepita Salad posted by th9090

Ingredients:

The amounts are approximations only.

1-2 bunches Chinese or curly Kale (I prefer Chinese)
3/4 cup dried cranberries SOAKED over night to get rid of the sugar and oil.
2 oz (about 1/2 cup almond slivers or slices SOAKED overnight.
3/4 cup pepitas (pumpkin seeds) SOAKED at least 4 hours.
4-5 green onions chopped.
1/4 cup crystallized ginger SOAKED over night to get rid of sugar and chopped.
Dressing:
1/4 cup apple cider vinegar
3 Tablespoons olive oil
1 Tablespoon agave
1 teaspoon Himalayan Crystal Sat
3 drops Young Living Orange Essential Oil

Directions:

Chop kale into bite size pieces, or break apart with hands.  Mix dressing and add to kale while chopping onion, and ginger.  Mix together in serving bowl and allow to marinate at least an hour is best.
