Ingredients:

4 potatoes
1 1/2 cup of flour
2 Tbsp. oil
sea salt, to taste
pepper, to taste
italian seasoning, to taste
Tomato sauce for pasta
Crushed garlic, 2 cloves
Vegan meat substitute crumbles
Vegan "Parmesan"

Utensils:
Large pot w/boiling water w/3 Tbsp of sea salt
strainer
potato masher
large bowl
1 fork
1 knife

Directions:

1. Put the large pot of water to boil w/the 3 Tbsp. of sea salt.
2. Put 4 potatoes to boil until soft.
3. Strain and peel w/knife under cold water.
4. In large bowl, mash them until completely mashed.
5. Add salt, pepper, and 2 Tbps. oil.
6. Start adding flour and kneeding with one hand until it has a firm consistency but still flexible and smooth (it may need more flour than 11/2 cup depending on potatoes moisture).
7. W/hands, make long "sausage" like links about 1/2 inch diameter and 1 foot. Sprinkle flour and cut in 1 inch pieces w/knife.
8. Roll through inside of fork, putting pressure in the pasta, creating a rolly-polly or seashell looking little pasta. Go through all the mix, rolling it all and sprinkling w/flour.
9. When water is boling, drop them stirring so that they don't stick. Bring to a boil again. Keep boiling for 7 minutes. Strain and set aside.
10. In empty pot, pour tomato sauce and crumbles. Season with Italian seasoning, Garlic, etc.
11. Mix gnocchi w/sauce and serve sprinkled with vegan "parmesan"
