Cook seitan and onion until onion is soft.  Add cumin and cream cheeze and 1 cup grated Vegan Gourmet.  Cook until melted.  Add Salsa and mix (save at least 1 cup of salsa for tops of enchiladas).  Spread 1/3 to 1/2 cup of mixture along middle of each tortilla, rollup and put into a 9x13 pan.  Spread remaining salsa on top and sprinkle with either more grated Vegan Gourmet or sliced Tofutti cheeze (Tofutti cheeze melts better but the grated cheeze will also work).  Cover with aluminum foil and bake at 350 degrees for at least 30 minutes.
