Here's a great little recipe Yael found online, I've adapted it a bit as it had like 2 Teaspoons of salt originally, which is waaay too much, and a little less oil. You can use them in spaghetti or any other way you can think of. We just made a sort of broth to put on the pasta.

Meatless Balls

* 2 cups dry TVP(or just seitan run through a coffee grinder/processor and minus water below)
* 1 3/4 cups boiling water
* 1 small onion, diced
* 1 T oil
* 1/2 t chili powder
* 1/2 t garlic powder
* A pinch of black pepper
* 1/2 t salt
* 1/2 t oregano
* 1 T soy sauce
* 1/2 cup white flour

Directions:

(Preheat oven to 350-375 if baking instead of frying)Soak the dry TVP in the cups boiling water for 10 minutes. Saute the onion in the oil, then add to the TVP, along with the chili powder, garlic powder, pepper, salt, oregano, soy sauce and flour. Stir until well mixed. Mold this mixture into balls 2.5 cm / 1 inch in diameter, pressing firmly. Fry in some oil until crispy.

Alternatively, you can bake the balls, I put the oven at 350 deg. F and baked for about 20 mins, they seemed to turn out ok like that and you don't have to tack on all the oil. Just bake until nice and brown on the outside.
