Preheat your oven to 350 degrees and grease an 8 x 8 inch square baking pan.

To make the topping, combine the granulated sugar, cocoa, and flour in a small bowl. Add in the oil, and stir well so that everything is incorporated. Add in the confectioner's sugar, taking care to coat as much of the mixture as possible, while breaking up the topping into small and medium sized crumbs. Set aside.

For the main batter, melt your margarine and let it cool down a bit before using (I actually did this before the crumble so the margarine would have time to cool). In a stand mixer (I just used a hand mixer), combine the soy yogurt and both sugars, followed by the margarine. Stir thoroughly, and then pour in the soy creamer. The coffee powder and vanilla can be mixed in at this point as well. Add in the flour, cocoa, and salt. Pause occasionally to allow the mixer to catch up to your demands, but rest assured that it will all come together in due time (Mine actually came together pretty quickly). Fold in the chips by hand, and smooth the batter into your prepared pan.

Sprinkle your crumb topping over the raw batter and bake for 25 to 28 minutes, until the sides pull away from the pan slightly. Allow the brownies to cool completely before cutting.
Makes 9 to 12 brownies.
